1.5poundsground beef
0.5mediumyellow oniondiced fine
1.5tbspcorn meal
1.5tbspchili powderguajillo FTW
1.5tspground cumin
0.5tspcayenne pepperoptional
1tspMexican oregano
0.5tspsea salt
0.5tsponion powder
1.5tspgarlic powder
1tspbrown sugar
1tspsmoked paprika
0.25tspcocoa powder
1.5tbsptomato paste
1cupbeef broth
1tsplime juice
Instructions
In a skillet, cook beef over medium heat, breaking up the meat until achieving a Taco Bell level of refinement. Depending on the fat content of the ground beef you are using, you may need to drain it.
Add onion and continue cooking until onions start to brown. It’s okay if you overcook the beef —- in fact, I like to turn up the heat toward the end and get some of it browned real good.
Add all dry ingredients and combine. Continue cooking for 1 to 2 minutes, allowing the seasonings to heat up and release their respective aromas.
Stir in beef broth and lime juice, then bring to a light boil. Reduce heat; simmer, uncovered, for 10 to 15 minutes or until the water is mostly evaporated and the mixture is thick and slightly saucy.
Notes
If you truly want Taco Bell level of refinement: after the initial browning of the beef, drain off the fat, then place in a food processor and pulse 3 or 4 times. Return it to the skillet or pan and continue.
