Ingredients
6largeeggs
0.5cupmilk
1tspsea salt
1tspblack pepper
16slicesdeli ham
16slicesColby Jack cheese
8largeflour tortillas20" to 24" diameter
1headspinach
Instructions
In a bowl, whisk eggs, milk, salt and pepper.
Coat a skillet about the same size as the tortillas with cooking spray. Heat the skillet over medium heat, then pour a thin layer of the egg mixture. Swirl the pan around, if necessary. Cook until firm. You can attempt to flip it if you want, but it will cook thoroughly on both sides because it's so thin.
Lay a tortilla out on a flat surface, then carefully remove the egg from the skillet (silicone spatula recommended) and place on the tortilla. Lay 2 slices of cheese lengthwise, then deli meat on top of the cheese. Add a few leaves of spinach and any other optional fillings. Be careful not to over-stuff them, as the tortillas could break. Start at one end and roll up.
Repeat 7 times or until you run out of eggs. The number of roll-ups you end up creating is directly proportional to the amount of egg mixture you use for each roll-up. If you keep them pretty thin, it should be easy to get a total of 8.
Serve with optional toppings or dipping sauces and enjoy.
