Mini Dumplings

Dumplings are a common staple in many Czech meals. Use these in place of noodles!

Dumplings go great with many dishes and can often replace pasta. Some folks like to simply cook them up, toss in butter and sprinkle a little paprika over the top. My Czech grandma would make them when we were kids, and my cousin would dump ketchup on them. That wasn’t something that interested me, but you can see how versatile these little dumplings can be.

Ingredients
  

  • 3 medium eggs
  • 1 tbsp butter softened but not melted
  • 0.75 cup milk lukewarm
  • 2 cups all-purpose flour
  • 0.25 tsp sea salt

Instructions
 

  • In a medium-sized bowl, whisk together the egg, butter and milk.
  • Add flour and salt to bowl and combine until it forms a soft dough. Add flour if too sticky.
  • Bring some salted water to a boil in a small pan. Once reaching a rolling boil, reduce heat to a low simmer. Using a spoon, scoop out small dough balls, about an inch in diameter each, and drop them into the boiling water. Let boil for 3 to 5 minutes or until cooked through. Be careful not to waterlog them while also ensuring they are fully cooked.
    Alternately, you could add them to soup a few minutes before serving.
  • Drain the water from the dumplings or place them in a strainer. If they will be sitting for a little while, toss them with a pad of butter to keep them from sticking together.
  • Serve with a sprinkle of paprika. You could also use them as a base for your Paprika Chicken.
