Here’s a quick and easy breakfast next time you have several people to feed.

These breakfast roll-ups are great for morning appetizers, and you can make them in advance. Once they have been made, you can pop them in the microwave for 30 to 45 seconds (depending on your microwave’s power rating), add toppings, and eat them with a fork. Or just eat them cold as finger foods.

In my case, I’m a member of a local networking group in which each member gets a turn to bring breakfast. So, I’m always looking for something that is easy to make, stores well overnight, and can be reheated the next morning. These breakfast roll-ups meet all of those requirements.

Ingredients
  

  • 6 large eggs
  • 0.5 cup milk
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 16 slices deli ham
  • 16 slices Colby Jack cheese
  • 8 large flour tortillas 20" to 24" diameter
  • 1 head spinach

Instructions
 

  • In a bowl, whisk eggs, milk, salt and pepper.
  • Coat a skillet about the same size as the tortillas with cooking spray. Heat the skillet over medium heat, then pour a thin layer of the egg mixture. Swirl the pan around, if necessary. Cook until firm. You can attempt to flip it if you want, but it will cook thoroughly on both sides because it's so thin.
  • Lay a tortilla out on a flat surface, then carefully remove the egg from the skillet (silicone spatula recommended) and place on the tortilla. Lay 2 slices of cheese lengthwise, then deli meat on top of the cheese. Add a few leaves of spinach and any other optional fillings. Be careful not to over-stuff them, as the tortillas could break. Start at one end and roll up.
  • Repeat 7 times or until you run out of eggs. The number of roll-ups you end up creating is directly proportional to the amount of egg mixture you use for each roll-up. If you keep them pretty thin, it should be easy to get a total of 8.
  • Serve with optional toppings or dipping sauces and enjoy.
