Frijoles Refritos
Once you've made the Frijoles En Olla recipe, you can easily prepare delicious refried beans.
Ingredients
- 6 servings leftover Frijoles En Olla
- 6 slices bacon diced
- 1 medium yellow onion diced
- 1 cup Colby Jack cheese grated
Instructions
- In a large pot, fry bacon until it is about halfway done. Add onions and cook until bacon is done.
- Drain broth from Frijoles En Olla into another container (do not discard). Add beans to bacon, then mash and gradually add broth until desired consistency is reached. Cook over medium heat for about 5 minutes, stirring often, being careful not to burn.
- Top with cheese and serve.
Notes
Pro Tip: Add more broth to make bean dip; serve with tortilla chips.
